Bourbon Peach Cobbler

Ingredients
- 6 ripe peaches, sliced
- 2/3 cup sugar, divided
- 2 tbsp bourbon
- 1 tbsp cornstarch
- 1 cup all-purpose flour
- 1.5 tsp baking powder
- 1/4 tsp salt
- 6 tbsp cold butter, cubed
- 1/2 cup heavy cream
- Vanilla ice cream, for serving
Method
- Prep the filling. Toss the peaches with 1/3 cup sugar, bourbon, and cornstarch. Spread in a greased 9-inch baking dish.
- Make the topping. Whisk flour, remaining sugar, baking powder, and salt. Cut in the cold butter until the mixture resembles coarse crumbs, then stir in the cream just until combined.
- Assemble. Dollop spoonfuls of the topping over the peaches, leaving some gaps for the fruit to bubble through.
- Bake. Bake at 375°F (190°C) for 30–35 minutes until the top is golden and the filling is bubbling.
- Rest and serve. Cool 10 minutes, then serve warm with vanilla ice cream.
